Peanut Butter Pie Bites

Yield : 15 bites (3 per serving) Prep time: 10 minutes, plus 1 hour to freeze
Ingredients: 1 (8oz) package cream cheese, softened 1/2 cup natural peanut butter (smooth ) 1/2 cup confectioners’-style erythritol 2 ounces dark chocolate (70% or more cacao, chopped)
Directions: 1. Line a sheet pan with parchment paper. 2. In mixing bowl cream together cream cheese and peanut butter using a hand mixer on med speed. When mixture is creamy smooth slowly add erythritol until well combined. 3. In a small glass dish, microwave the chocolate in 30 second increments, stirring after each, until the chocolate is melted and smooth. 4. Drop tablespoons of the peanut butter mixture onto the prepared pan. drizzle melted chocolate over each bite and put the pan in the freezer for at least one hour before serving. 5. Remove bites from freezer and let sit for a few minutes before serving! Leftovers can be stored in an airtight container in the freezer IF there are any left!
